Turon (banana lumpia)

Ingredients

INGREDIENTS

  • 8-inch square lumpia wrappers
  • 6 Ripe baby bananas, cut lengthwise*
  • 1 cup sliced jackfruit, fresh or canned
  • 1  cup brown sugar
  • water, for sealing wrappers
  • vegetable oil, for frying

Caramel Coating:

  • 1 cup brown sugar

InstructionsINSTRUCTIONS

  1. Place square lumpia wrapper on work surface with one point of the square facing you.  Place horizontal on lower 1/3 of lumpia wrapper. Add a couple strips of jackfruit.
     
  2. Fold the tip of the square wrapper up to cover the banana and jackfruit. Fold the tip of the right side and left side in to create an envelope.
     
  3. Use both hands to roll the wrapper into a log. Moisten the top tip of the wrapper with water and continue to roll the wrapper up to seal. Repeat with remaining ingredients.
     
  4. Add about  1-inch of vegetable oil to a frying pan . Set over medium heat and bring oil to a temperature of 350°F (175°C). 

Serve room temperature

Vegan Afritada

Ingredients

  •  2 8oz packs fried bean curd lbs chicken
  • 2 tablespoons lemon juice
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 6 cloves garlic, chopped
  • 1 medium onion, chopped
  • 2 medium tomato, diced
  • 1 tsp cayenne pepper
  • Salt and pepper, to taste
  • 1 cup tomato sauce
  • 1 cup water 
  • 2 medium  potatoes, cubed
  • 2 carrot, cubed
  • 1 red bell pepper, cubed

Instructions

  • Marinate bean curd pieces in soy sauce and lemon juice for half an hour. Drain bean curd from the marinade.
  • In a heavy pan, heat oil over medium high heat. Sauté garlic, onions and tomatoes for 2 minutes or until onions are soft.
  • Add potatoes, carrots 
  • . Add tomato sauce, bean curd and water and stir to combine. Let the mixture boil and then reduce heat. Cover and let simmer, stirring occasionally for 30 minutes.
     
  • Add, red bell pepper and; green peas cover and cook for 10 minutes or until potatoes are tender.
    Season with salt and pepper, to taste.
  • Serve with steamed rice. Enjoy!

Ingredients

  • 1 tablespoon sesame oil 
  • 1 pk fried bean curd
  • 2 cloves garlic, crushed 
  • 1  chopped onion 
  • 1 cup minced carrots 
  • 1/2cup chopped green onions 
  • 1 cup thinly sliced green cabbage 
  • 1 teaspoon ground black pepper 
  • 1/4 cup  soy sauce 
  • 30 eaches lumpia wrappers 
  • 2 cups vegetable oil for frying 

Directions

Step 1
Place a wok or large skillet over high heat, and pour in 1 sesames oil. Cook stirr Cook bean curd and mushroom stirring frequently. Drain grease from pan, leaving a thin coating. Cook garlic and onion in the same pan for 2 minutes. Stir in the cooked bean curd and carrots, green onions, and cabbage. Season with pepper, salt, garlic powder, and soy sauce. Remove from heat, and set aside until cool enough to handle.
 

Step 2
Place three heaping tablespoons of the filling diagonally near one corner of each wrapper, leaving a 1 1/2 inch space at both ends. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you assemble. Moisten the other side of the wrapper with water to seal the edge. Cover the rolls with plastic wrap to retain moisture.
 

  • Step 3
    Heat a heavy skillet over medium heat, add oil to 1/2 inch depth, and heat for 5 minutes. Slide 3 or 4 lumpia into the oil. Fry the rolls for 1 to 2 minutes, until all sides are golden brown. Drain on paper towels. Serve immediately.
     
  • Serving 15
  • Cook 15 mins
